- 6 sweet potatoes, cut in half lengthwise (2-2.5 lbs)
- 2 tsp Collected Foods Ras el Hanout
- 6 tbsp Coconut Oil
- 1 tsp Salt
- Preheat the oven to 400F.
- In a small pot over medium, add coconut oil, Ras el Hanout and salt and simmer 2-3 minutes.
- Line a sheet pan with parchment paper. Place sweet potatoes and brush generously with spice mixture. Roast for 40-45 minutes until tender when pierced with a knife and deep golden brown. Remove from the oven and preheat the broiler.
