Why this spice: Collected Foods Za'atar seasons this dish with clean heat and depth so the finish tastes intentional, not muddy.
Ingredients
- 100g ripe sourdough starter (100% hydration)
- 50g flour (I like a mix of bread and wholegrain)
- 10g olive oil
- 10g honey
- 2g salt
- Assorted seeds (poppy, sesame), spices, and/or flaky salt for topping, if desired
- Our favorite, Collected Foods Zaatar
Directions
- Heat the oven to 350°F. Mix discard/starter with flour, oil, salt, and Collected Foods Za'atar into a soft dough.
- Roll very thin for lavash, or shape into grissini ropes. Dock lavash with a fork.
- Bake until crisp and browned at the edges, 15–25 minutes depending on thickness. Cool on a rack—they crisp further as they cool.
- Break lavash into shards. Store airtight.
