Zaatar Roasted Vegetables with Lemon Tahini Drizzle

Ingredients:

  • 2 cups cauliflower florets

  • 2 cups broccoli florets

  • 1 red bell pepper, sliced

  • 1 zucchini, sliced into half-moons

  • 1 small red onion, sliced

  • 3 tbsp olive oil

  • 2 tbsp Collected Foods Za’atar Spice

  • 1/2 tsp sea salt

  • 1/2 tsp black pepper

Lemon Tahini Drizzle:

  • 1/4 cup tahini

  • 2 tbsp lemon juice

  • 1 tbsp olive oil

  • 1 garlic clove, minced

  • 2-3 tbsp water (to thin)

  • Pinch of salt

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. Prepare the vegetables: In a large bowl, toss the cauliflower, broccoli, bell pepper, zucchini, and red onion with olive oil, Collected Foods Za’atar Spice, sea salt, and black pepper until well coated.

  3. Roast the vegetables: Spread the seasoned vegetables in a single layer on the baking sheet. Roast for 20-25 minutes, flipping halfway, until golden and slightly crispy at the edges.

  4. Make the Lemon Tahini Drizzle: In a small bowl, whisk together the tahini, lemon juice, olive oil, minced garlic, and a pinch of salt. Add water, one tablespoon at a time, until the sauce reaches a smooth, pourable consistency.

  5. Serve: Drizzle the roasted vegetables with the lemon tahini sauce and garnish with fresh herbs like parsley or cilantro if desired.
