Ingredients
- 2 Tbsp olive oil or butter
- 1 onion, diced
- 3 garlic cloves, sliced
- 2 Tbsp gochujang
- 1 tsp Collected Foods Korean Chili (Gochugaru)
- 1 can (28 oz) crushed tomatoes
- 2 cups vegetable or chicken broth
- 1 tsp sugar
- 1/2 cup cream or coconut milk (optional)
- Salt; grilled cheese or crusty bread, to serve
Directions
- Sweat onion in oil until deeply golden, 10–12 minutes. Add garlic 1 minute.
- Stir in gochujang and gochugaru; cook 1 minute to caramelize the paste.
- Add tomatoes, broth, and sugar. Simmer 15 minutes.
- Blend smooth if desired; stir in cream. Season and serve with bread.
- Taste and adjust salt or spice before serving.
