Ingredients
- 4 salmon fillets, skin-on
- 1.5 tbsp Collected Foods Tuscan Grill Italian Seasoning
- 1 tsp kosher salt
- 2 tbsp olive oil
- 3 tbsp butter
- 3 garlic cloves, minced
- 1/2 cup cherry tomatoes, halved
- 2 cups baby spinach
- 1/4 cup cream or splash of stock
- Lemon wedges
Directions
- Season salmon with Tuscan Grill seasoning and salt.
- Heat oil in a skillet over medium-high. Cook salmon skin-side down 4–5 minutes, flip, cook 2–3 minutes more; remove.
- Lower heat; add butter, garlic, and tomatoes. Cook 2 minutes. Add spinach and cream; wilt.
- Return salmon to the pan to warm. Serve with lemon and the buttery vegetables spooned over.
