Ingredients
- 2 medium eggplants, sliced 1/2-inch thick
- Kosher salt, for sweating
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan, divided
- 2 tbsp Collected Foods Tuscan Grill Italian Seasoning, divided
- 2 eggs, beaten
- Olive oil, for pan-frying or brushing
- 3 cups marinara sauce
- 8 oz mozzarella, sliced or shredded
- Fresh basil
Directions
- Salt eggplant slices; rest 20 minutes, then pat dry.
- Mix breadcrumbs, 1/4 cup Parmesan, and 1 tbsp Tuscan Grill seasoning. Stir remaining seasoning into marinara.
- Dip eggplant in egg, then crumbs. Pan-fry in oil until golden (or brush with oil and bake at 425°F for 20 minutes).
- Layer sauce, eggplant, mozzarella, and remaining Parmesan in a baking dish. Bake at 375°F for 25 minutes until bubbly.
- Rest 10 minutes; finish with basil.
