Collected Foods kitchen recipe.
Gochujang Buttered Noodles with Gochugaru Finish: Weeknight Korean heat with clean, layered chili flavor. Collected Foods Korean Chili is the flavor driver.
Serves: 4
Why this spice: A finish of Collected Foods Korean Chili keeps gochujang buttered noodles bright instead of one-note sweet.
Ingredients
- 12 oz spaghetti or ramen noodles
- 4 Tbsp unsalted butter
- 2 Tbsp gochujang
- 1 Tbsp soy sauce
- 1 tsp Collected Foods Korean Chili (Gochugaru), plus more to finish
- 2 garlic cloves, minced
- 1/4 cup pasta water
- 2 green onions, sliced
- Soft egg or grated Parmesan (optional)
Directions
- Cook noodles until just shy of al dente; reserve pasta water.
- Melt butter with garlic; stir in gochujang, soy, and gochugaru until glossy.
- Toss noodles with sauce and pasta water until emulsified and clingy.
- Top with green onion and a final dusting of gochugaru. Add egg or cheese if you like.
- Taste and adjust salt or spice before serving.
