Why this spice: Zaatar finishes chickpea pasta with lemony sesame herbs instead of heavy cream.
Ingredients
- 12 oz gigli, shells, or other short pasta
- 1 can chickpeas, drained
- 3 Tbsp olive oil
- 3 garlic cloves, sliced
- 2 tsp Collected Foods Zaatar, plus more to finish
- 1 lemon, zest and juice
- Handful spinach or parsley
- Parmesan or feta optional
Directions
- Cook pasta; reserve 1 cup water.
- Fry chickpeas and garlic in oil until chickpeas blister. Stir in zaatar.
- Toss with pasta, lemon, greens, and pasta water to loosen.
- Finish with more zaatar and cheese if using.
- Taste and adjust salt or spice before serving.
