Why this spice: Blooming harissa in oil before steaming couscous or quinoa seasons every grain.
Ingredients
- 1 cup couscous or quinoa
- 1 1/2–2 cups broth (per grain package)
- 1 Tbsp olive oil
- 1 1/2 tsp Collected Foods Harissa Spice Powder
- 1/2 cup chickpeas (optional)
- Lemon, herbs, toasted almonds
Directions
- Bloom harissa in warm oil 30 seconds; add broth and bring to a simmer.
- Stir in couscous (cover off heat 5–10 min) or cook quinoa per package in the spiced broth.
- Fluff with chickpeas, lemon, herbs, and almonds.
- Serve as a side or bowl base.
- Taste and adjust salt or spice before serving.
