Collected Foods kitchen recipe.
Harissa Scrambled Eggs or Breakfast Hash: North African warmth for trays, stews, and quick sauces. Collected Foods Harissa Spice Powder is the flavor driver.
Serves: 2–3
Why this spice: Morning eggs love a bloom of harissa in butter or a crispy potato hash.
Ingredients
- Path A — Scramble: 6 eggs, 1 Tbsp butter, 1 tsp Collected Foods Harissa Spice Powder, salt, herbs
- Path B — Hash: 2 cups diced cooked potatoes, 1 pepper, 1 small onion, 1 1/2 tsp harissa, 2 Tbsp oil, fried eggs
Directions
- Scramble: melt butter with harissa; add beaten eggs and soft-scramble; herbs on top.
- Hash: sauté onion and pepper in oil; add potatoes and harissa; crisp. Top with fried eggs.
- Either path loves a side of toast and yogurt.
- Adjust harissa to your morning heat tolerance.
- Taste and adjust salt or spice before serving.
