Ingredients
- 1 whole chicken, spatchcocked, or 8 thighs
- 1 1/2 lb potatoes, wedges
- 3 Tbsp olive oil, divided
- 2 Tbsp Collected Foods Zaatar
- 1 Tbsp sumac (or more zaatar)
- 1 lemon, sliced
- Salt and pepper
Directions
- Toss potatoes with 1 Tbsp oil, sumac, salt; spread on a sheet.
- Rub chicken with remaining oil, zaatar, salt, and pepper; set on potatoes with lemon.
- Roast at 425°F for 40–50 minutes until chicken is done and potatoes crisp.
- Rest 10 minutes; carve over the potatoes.
- Taste and adjust salt or spice before serving.
