Why this spice: Zaatar on chicken and sumac on potatoes make one sheet-pan supper with bright Middle Eastern flavor.

Ingredients

  • 1 whole chicken, spatchcocked, or 8 thighs
  • 1 1/2 lb potatoes, wedges
  • 3 Tbsp olive oil, divided
  • 2 Tbsp Collected Foods Zaatar
  • 1 Tbsp sumac (or more zaatar)
  • 1 lemon, sliced
  • Salt and pepper

Directions

  1. Toss potatoes with 1 Tbsp oil, sumac, salt; spread on a sheet.
  2. Rub chicken with remaining oil, zaatar, salt, and pepper; set on potatoes with lemon.
  3. Roast at 425°F for 40–50 minutes until chicken is done and potatoes crisp.
  4. Rest 10 minutes; carve over the potatoes.
  5. Taste and adjust salt or spice before serving.
