Ingredients
- Path A — Potatoes: 2 lb baby potatoes, 3 Tbsp oil, 2 Tbsp Collected Foods Zaatar, salt
- Path B — Focaccia: after dimpling dough, brush oil and sprinkle 2–3 Tbsp zaatar before baking
Directions
- Potatoes: toss with oil, zaatar, and salt; roast at 425°F for 30–40 minutes until crisp.
- Focaccia: top proofed dough with oil and zaatar; bake per your focaccia recipe until golden.
- Finish either with flaky salt and lemon zest.
- Both paths turn zaatar into a crunchy, aromatic crust.
- Taste and adjust salt or spice before serving.
