Why this spice: Collected Foods Ras El Hanout loves salmon—the warm spices bloom against the rich fish and sweet roasted vegetables.
Ingredients
- 4 salmon fillets (6 oz each)
- 3 cups cauliflower florets
- 4 carrots, cut into batons
- 3 tbsp olive oil, divided
- 2 tbsp Collected Foods Ras El Hanout, divided
- 1.5 tsp kosher salt, divided
- 1 lemon, sliced
- Fresh dill or parsley
Directions
- Heat oven to 425°F. Toss cauliflower and carrots with 2 tbsp oil, 1 tbsp Ras El Hanout, and 1 tsp salt. Roast 15 minutes.
- Rub salmon with remaining oil, 1 tbsp Ras El Hanout, and remaining salt.
- Push vegetables aside, add salmon and lemon slices to the pan. Roast 10–12 minutes until salmon flakes.
- Scatter herbs over the tray. Serve with couscous or a simple green salad.
