Why this spice: A warm swirl of Collected Foods Ras El Hanout oil turns everyday hummus into a fragrant mezze centerpiece.
Ingredients
- 2 cans (15 oz) chickpeas, drained (reserve 1/4 cup liquid)
- 1/3 cup tahini
- 1/4 cup lemon juice
- 2 garlic cloves
- 1/2 tsp kosher salt, plus more to taste
- 3 tbsp olive oil, divided
- 1.5 tsp Collected Foods Ras El Hanout
- Paprika and chopped parsley, for garnish
- Warm pita, for serving
Directions
- Blend chickpeas, tahini, lemon, garlic, salt, 1 tbsp oil, and chickpea liquid until very smooth. Warm gently in a small pot or microwave.
- Warm remaining 2 tbsp oil with Ras El Hanout in a small skillet over low heat 1–2 minutes until fragrant (do not burn).
- Spread hummus in a shallow bowl. Swirl Ras El Hanout oil over the top.
- Dust with paprika and parsley. Serve warm with pita.
