Why this spice: Collected Foods Coffee Rub gives skirt steak a dark, savory crust that stands up to bright taco toppings.
Ingredients
- 1 1/2 lb skirt steak
- 2 Tbsp Collected Foods Coffee Rub
- 1 Tbsp olive oil
- 3/4 tsp kosher salt (if your rub is unsalted)
- 8 small corn or flour tortillas, warmed
- 1 cup shredded cabbage
- 1 avocado, sliced
- Lime wedges, cilantro, and salsa
Directions
- Pat steak dry. Rub with oil, then coat evenly with Coffee Rub and salt. Rest 15 minutes at room temperature.
- Heat a cast-iron skillet or grill to high. Sear steak 2–3 minutes per side for medium-rare.
- Rest 5–8 minutes, then slice thinly against the grain.
- Build tacos with cabbage, steak, avocado, cilantro, salsa, and lime.
Slice against the grain or skirt steak will chew — short strokes, sharp knife.
