Why this spice: Collected Foods Coffee Rub is a natural brisket bark—coffee and spice caramelize through a long smoke or oven cook.
Ingredients
- 1 whole packer brisket (10–12 lb) or a 5 lb flat
- 1/3 cup Collected Foods Coffee Rub
- 2 tbsp kosher salt
- 1 tbsp black pepper
- 1 cup beef stock for the pan (oven method)
Directions
- Trim brisket as needed. Mix Coffee Rub, salt, and pepper; coat all sides heavily. Rest overnight refrigerated.
- Smoke at 250°F until probe-tender (about 1–1.25 hr per pound), wrapping in butcher paper when bark sets. Or oven-roast covered at 275°F with stock until tender, then uncover to firm the bark.
- Rest wrapped 1 hour. Slice against the grain.
