Why this spice: Collected Foods Coffee Rub builds a coffee-forward crust that pairs with sweet apple butter for a fall pork chop plate.
Ingredients
- 4 bone-in pork chops (about 1 inch thick)
- 2 Tbsp Collected Foods Coffee Rub
- 1 Tbsp olive oil
- Kosher salt, as needed
- 1/3 cup apple butter
- 1 Tbsp apple cider vinegar
- 1 tsp Dijon mustard
- Sautéed apples or greens for serving
Directions
- Pat chops dry. Rub with oil and Coffee Rub; season lightly with salt if needed. Rest 20 minutes.
- Heat a heavy skillet over medium-high. Sear chops 4–5 minutes per side until browned and cooked to 145°F.
- Rest chops on a plate. Lower heat; whisk apple butter, vinegar, and Dijon into the pan with a splash of water.
- Simmer 1 minute into a glossy sauce. Spoon over chops and serve with apples or greens.
Thick chops finish gentler — if browning too fast, lower heat and lid for the last minutes.
