Ingredients
- 2 rib-eye steaks (1–1.25 inches thick)
- 2 tbsp Collected Foods Coffee Rub
- 1 tsp kosher salt (if rub is low-salt)
- 1 tbsp neutral oil
- 2 tbsp butter
- 2 garlic cloves, smashed
Directions
- Pat steaks dry. Coat generously with Coffee Rub (and salt if needed). Rest 20 minutes.
- Heat a cast-iron skillet until very hot; add oil. Sear steaks 3–4 minutes per side.
- Add butter and garlic; baste 1 minute for medium-rare (adjust time for thickness).
- Rest 8 minutes before slicing. Spoon pan butter over the meat.
