Ingredients
- 1 bone-in prime rib roast (6–7 lb)
- 1/4 cup Collected Foods Coffee Rub
- 2 tbsp kosher salt
- 2 tbsp olive oil
- 4 garlic cloves, smashed
Directions
- Mix Coffee Rub, salt, and oil into a paste; rub all over the roast with garlic. Rest overnight refrigerated.
- Roast at 250°F until 120°F internal for medium-rare (about 3.5–4.5 hours). Rest 30 minutes under tented foil.
- Blast at 500°F for 8–10 minutes to crisp the exterior. Slice and serve.
