Ingredients
- 2 racks pork spare ribs, membrane removed
- 3 tbsp Collected Foods Coffee Rub
- 1 tsp kosher salt
- 1/2 cup apple cider vinegar in a spray bottle
- 1 cup BBQ sauce, for finishing
Directions
- Rub ribs with salt and Coffee Rub. Wrap and refrigerate at least 2 hours.
- Smoke at 250°F (or roast on a rack over a pan) 3 hours, spritzing with vinegar hourly.
- Brush with BBQ sauce; cook 30–45 minutes more until tender and glazed.
- Rest 15 minutes; slice between bones.
