Ingredients
- 2.5 lb russet potatoes, peeled and grated
- 1 onion, grated
- 3 eggs, beaten
- 1/3 cup matzo meal or flour
- 1/4 cup oil or schmaltz, plus more for the pan
- 1.5 tsp Collected Foods Bacon Salt
- 1/2 tsp black pepper
Directions
- Heat oven to 400°F. Oil a 9x13-inch baking dish generously.
- Squeeze excess liquid from potatoes and onion. Mix with eggs, matzo meal, oil, Bacon Salt, and pepper.
- Spread in the dish. Bake 50–60 minutes until deeply browned and crisp on top.
- Rest 10 minutes; cut into squares. Finish with a light dusting of Bacon Salt if desired.
