Why this spice: Umami powder acts like porcini dust—concentrated mushroom depth for risotto, chili, or meatballs.
Ingredients
- For risotto: 1 1/2 cups arborio, 4 cups broth, 2 tsp Collected Foods Umami Mushroom Powder, 1/2 onion, 1/2 cup wine, 2 Tbsp butter, Parmesan
- Or for chili: stir 1–2 tsp umami powder into any chili in the last 20 minutes
- Or for meatballs: mix 2 tsp umami powder into 1 lb ground meat with egg, crumbs, and salt
Directions
- Risotto path: sweat onion, toast rice, add wine, then ladle broth while stirring; finish with butter, Parmesan, and umami powder.
- Chili path: bloom umami powder in a ladle of hot chili liquid, then stir back in and simmer.
- Meatball path: mix powder into meat, form balls, bake or simmer in sauce until cooked.
- Taste and adjust salt—umami powder intensifies savoriness so you may need less salt overall.
- Taste and adjust salt or spice before serving.
