Why this spice: Umami mushroom powder concentrates dried-mushroom savor in a tomato-kissed vegetable ragù.
Ingredients
- 1 oz dried mushrooms, soaked, chopped (soak liquid reserved)
- 1 lb fresh mushrooms, minced
- 2 Tbsp olive oil
- 1 onion, finely diced
- 2 tsp Collected Foods Umami Mushroom Powder
- 1 Tbsp tomato paste
- 1 tsp smoked paprika
- 1/2 cup crushed tomatoes
- Cooked polenta, pasta, or rice
Directions
- Sauté onion in oil until soft. Add fresh mushrooms; cook until dry and browned.
- Stir in soaked mushrooms, tomato paste, paprika, and umami powder.
- Add tomatoes and 1/2 cup soak liquid (strained). Simmer 15–20 minutes until thick.
- Season and spoon over polenta, pasta, or rice.
- Taste and adjust salt or spice before serving.
