Why this spice: Collected Foods Ras El Hanout caramelizes onto root vegetables so they taste sweet, earthy, and gently spiced.
Ingredients
- 2 lb mixed root vegetables (carrots, parsnips, beets), peeled and cut into sticks
- 1 red onion, wedges
- 3 tbsp olive oil
- 2 tbsp Collected Foods Ras El Hanout
- 1 tsp kosher salt
- 1 tbsp honey or maple syrup
- 2 tbsp chopped parsley
- Flaky salt, to finish
Directions
- Heat oven to 425°F. Toss vegetables and onion with oil, Ras El Hanout, and kosher salt on a sheet pan.
- Roast 30–35 minutes, tossing halfway, until edges are browned and centers tender.
- Drizzle honey over hot vegetables and toss once more in the oven for 3 minutes.
- Finish with parsley and flaky salt. Serve alongside roast chicken, fish, or grains.
