Ingredients
- Cookies: 2.5 cups flour, 1 tsp baking powder, 1.5 tsp Collected Foods Saigon Cinnamon, 1/2 tsp salt, 3/4 cup butter, 1 cup sugar, 1 egg, 1/2 cup pumpkin puree, 1 tsp vanilla
- Frosting: 6 tbsp butter browned and cooled, 2 cups powdered sugar, 1 tsp Collected Foods Saigon Cinnamon, 2–3 tbsp milk
Directions
- Whisk dry ingredients including Saigon Cinnamon. Cream butter and sugar; beat in egg, pumpkin, vanilla. Mix in dry ingredients. Chill 30 minutes.
- Scoop onto sheets; bake at 350°F for 10–12 minutes until edges set. Cool.
- Beat browned butter frosting with powdered sugar, Saigon Cinnamon, and milk. Frost cooled cookies.
